Lemon Cheesecake

Our light and fragrant Matchacha waffle features a generous layer of lemon cheesecake mousse, complemented by candied lemons and topped with vegan coconut whipped cream. A few shavings of fresh lemon zest and a sprinkle of matcha powder complete this creation, which combines freshness, tangy sweetness, and vegetal notes.

Ingredients:

  • Candied lemons
  • Lemon cheesecake mousse
  • Lemon zest
  • Matcha powder

Preparation tips:

  • Whip the cream until stiff peaks form. Mix the cream cheese with powdered sugar, lemon juice, and a pinch of salt, then gently fold this mixture into the whipped cream. Everything must be very cold and kept refrigerated.
  • Simmer the lemon slices in a syrup (water, sugar) for 30 to 40 minutes.
